This is the coast of Puerto Vallarta — terracotta earth, blue-green agave fields stretching across Jalisco, and waves that fizz as they sink into warm sand. Juicy green limes lead the way, sharp and a little sour, brightened by kumquat and the soft sweetness of exotic local fruit. Underneath runs the spirit of the region: blue agave, mezcal, a whisper of sea salt and savory spice that keeps things grounded. Over time it settles into something calm and clean — green and translucent, like cool spa water and pale driftwood warmed by the sun.
