The Story
The nutmeg factory had been running for more than a century when he visited, and it was closing.
He came back with aged nutmeg paste — thick and buttery, nothing like the powder in a kitchen cupboard — and built the whole thing around it. Ginger flower, which Nyonya cooking rests on. Pagoda tree flower. Enough Malaysian sandalwood to carry the weight.
Eucalyptus and pink pepper cut in sharp, lime across them, concentrated lemongrass running underneath. Frangipani and ambergris come late and slow everything down, the way heat does after dark. Fujianese, Malay, Indian and Cantonese in one street, which is what Penang is, and what he was trying to keep.
